What is Asafoetida?
Asafoetida is a common ingredient in the kitchens and more common with its another name, ‘hing’. It is a strong spice that comes from the resin of the Ferula plant. This plant grows mostly in the Middle Eastern regions of Iran and Afghanistan.
Asafoetida resin is taken out of the plant’s root by making microscopic cuts. It is a kind of milky latex that turns into a solid gum after being released.

How is Asafoetida cultivated?
Asafoetida is cultivated mainly in dry, cold desert regions like Afghanistan and Iran. It grows best on sandy soil that drains water well and receives little precipitation throughout the year.
Farmers plant ferula seeds in the early spring. The plant takes four to five years to reach maturity. To store the resin, it develops large taproots.
When the plant gains full maturity, farmers make wounds in the root to produce creamy latex. After drying into resin lumps, this latex is gathered, processed, and crushed for use as asafoetida.
